Egg Benjo is a quick and easy recipe that brings together the two most iconic breakfast ingredients, eggs and bread. This easy-peasy DIY recipe is a must-try at home and can be whisked up in under half an hour.

Egg Benjo which is a masala omelette sandwich gets its name from ‘Egg Banjo’ which was a popular egg sandwich among the British soldiers during World War II. It consisted of white bread, margarine, fried eggs, and topped up with ketchup.

Over the years, the ‘Egg Banjo’ became popular across the world including India due to the British having an imperial past. In India, it came to be known as ‘Egg Benjo’ instead and was adjusted according to the palate of the localities of Indore, Madhya Pradesh where it first became popular.

Indulge In This Sinfully Masaledar Egg Benjo Dish From The Streets Of Indore
Crack eggs in a bowl and add onion, tomatoes, green chillies, coriander, turmeric, Kashmiri red chilli powder, and salt and whisk well.
Heat butter in a pan and pour it into it to make the omelette. Fry until it turns golden-brown.
Cut the omelette into half and keep aside.
Now cut pav into two pieces and toast them with butter on the pan.
Add coriander chutney and jaggery-imli chutney on the pav.
Keep the omelette in between and close the sandwich.
Enjoy the hot and crispy ‘Egg Benjo' with the dip and a drink of your choice.
