    Rainbow Salad

    Ingredients:- 

    1 medium cucumber (green, yellow and red)

    1 cup carrot

    1 cup tomato

    1 cup yoghurt

    2 mint/coriander leaves

    1 spring onion 

    1 cup red onion

    1 red cabbage 

    1 lemon 

    2 green chilli

    How To Make It:- 

    1. Wash the vegetables in lukewarm water and add some salt to them to squeeze out any excess water. After a cold water rinse, chop all the veggies into small cubes and keep them aside. 

    2. Now in a large bowl add some yoghurt and beat it smoothly. Then add the finely chopped vegetables to it.

    3. Now garnish the salad with fresh mint or coriander leaves, green chilli, salt, and pepper as per taste and serve.
