For Bhaidooj, make this crispy bhindi sprinkled with chaat masala
Firstly, take 260 grams bhindi but make sure to wash and pat dry before slicing.
Cut it into thick strips and remove the seeds.
Add chilli powder, turmeric, coriander powder, cumin powder and chaat masala.
Mix well so that the spices are well coated.
Now add the lemon juice and salt and then mix well.
Marinate the mixture for 10 minutes till all the flavours seep in.
further, add ¼ cup besan and ¼ cup rice flour.
Mix well so that you coat the flour uniformly.
Add 2 tsp oil and mix gently coating the masala properly.
Do not add extra water, salt helps to release moisture and adding water makes bhindi sticky.
Deep fry in hot oil.
Stir occasionally and fry on medium flame.
Fry till the bhindi becomes golden and crispy.
Drain off the excess oil with a kitchen paper and sprinkle with chaat masala as that enhances the flavour.
Serve hot.
