Make This Lip-smacking Gaja Recipe To Celebrate Rath Yatra

One of the mahaprasads in Puri Jagannath temple, a devotee must make an offering of the gaja to Lord Jagannath, since it's one of his favourite foods. Sweet, blissful indulgence, it is a lip-smacking delicacy that one can even make at home. A nice evening, apart from being a holy offering, it pairs well with some sweetened milk tea or can be had as a dessert post lunch or dinner. Here is how you can make the gaja.

Ingredients

For The Dough

  • Refined flour - 2 cups
  • Ghee - 1 tap
  • Refined oil - 2 tsp
  • Baking soda - 1/2 tsp
  • Water as required (between 6 to 10 tsp)

For Sugar Syrup

  • Sugar - 1 cup
  • Water - 1/4 cup
  • Rose essence - 1/2 tsp

For Frying

  • Ghee - 50 grams
  • Refined oil - 200 grams

Method

  • Sieve the refined flour and baking soda together. Mix the two ingredients well and get rid of possible lumps. You may buy baking soda from here at ₹ 170.
  • Add 1 tap of ghee and 2 tsp of oil to the mixture and thoroughly mix with your fingers. Gradually add water to the mixture while kneading so that the dough attains a soft consistency and can be rolled easily.
  • Cover with a damp muslin cloth and keep it for 10 minutes.
  • Break them into small round balls and roll them out like a chapati before folding them like half made paper fans.
  • Fry them in the oil and ghee mixture.

  • Remove the excess oil with the help of a kitchen towel and keep aside.
  • Take a saucepan (you can buy a Stainless Steel Sauce Pan at a discounted price of ₹ 299 from here), add the water and sugar to it. 
  • Once it warms a little, add the rose essence (You can get rose essence at ₹ 119 from here). Keep on boiling till a thread like consistency is achieved. Your syrup is ready.
  • Remember to turn off the gas as soon as the mixture starts boiling. 

 

  • Once cooled, put the gaja in the syrup and let them soak for 5-10 minutes.
  • Remove and cool the gaja for 5 more minutes.

 

The gajas are ready for both offering and having.
