1. In a mixing bowl, combine the prawns with salt, black pepper powder, turmeric powder, and red chilli powder. Mix well until the prawns are evenly coated with the spices. Allow them to marinate for 10-15 minutes.

2. Using a mortar and pestle, coarsely pound the Madras onions (or shallots) until they form a rough paste. Add garlic cloves, chopped green chillies, and curry leaves to the mortar and continue pounding until all the ingredients are combined into a coarse paste.

3. Heat vegetable oil in a heavy-bottomed pan or earthen pot over medium heat. Add the prepared coarse paste to the hot oil. Saute for 2-3 minutes until the mixture becomes aromatic and the onions turn slightly golden.

4. Stir the finely chopped ginger into the pan. Cook for an additional 1 minute, allowing the flavours to meld together.

5. Now add the marinated prawns to the pan. Saute the prawns on high heat for 2-3 minutes, stirring continuously, until they turn pink and start to curl slightly.

6. Reduce the heat to medium. Pour coconut milk into the pan. Stir well to combine all the ingredients. Let the curry simmer gently for another 2-3 minutes, allowing the flavours to meld and the prawns to cook through.

7. Once the prawns are cooked and the curry has thickened slightly, remove from heat.

8. Serve it hot with a garnish of freshly chopped coriander leaves.

Ingredients

  • 20-25 medium prawns (cleaned

  • and washed)
  • 2 tablespoons coconut milk
  • 10-15 Madras onions
  • 3 green chillies
  • 1 teaspoon black pepper powder
  • 2 teaspoon red chilli powder
  • 1 teaspoon turmeric powder
  • 10-15 curry leaves
  • 5-8 garlic cloves
  • 1 inch chopped ginger
  • Salt to taste
  • Vegetable oil required for cooking

  • Step 1 :

    First take a medium-sized bowl and add prawns, salt, black pepper powder, red chilli powder, and turmeric powder and mix it well. Allow the mixture to marinate for 10-15 minutes.

    Now heat oil in an earthen pot. Add the coarse paste and ginger to it and let it cook for 5 to 10 minutes.

    Now add the marinated prawns and saute over high heat for 2-3 minutes.

    Lower the heat to medium, then pour in the coconut milk. Cook for an additional 2-3 minutes.

    Serve hot with rice.
