Biryani is one dish that everyone loves and can have it just any day. All this while, due to the pandemic, we have been craving for our favourite biryani from our favourite restaurant. Many of us tried our hands on preparing biryani at home but failed to get that delicious taste and aroma. Do you know what's the secret to making good biryani? Biryani masala! Like any other regular dish we prepare at home, biryani too requires some special masala powder. Though biryani masala powders are easily available in the market, we suggest you try making it at home using this easy recipe. Biryani Masala Powder Recipe Card

  • 3-4 bay leaf
  • 1/4 cup coriander seeds
  • 10 small cardamom
  • 1 tbsp black pepper corns
  • 1 tbsp fennel seeds
  • 1 tbsp cumin seeds
  • 1 tbsp shah jeera
  • 2 big cardamom
  • 2 mace
  • 2 star anise
  • 1 tbsp stone flower
  • 10 cloves
  • 1/2 piece nutmeg
  • 5-6 dry red chilli
  • 3 small cinammon stick


Step 1
In a non-stick pan, add corinader seeds, cumin seeds, cumin seeds, shah jeera, fennel seeds, bay leaf. Dry roast for 1-2 minutes on low heat.
Step 2
Next, add all the left spices and roast. Make sure that all the spices are dry or else the masala powder will have a shorter usage period.
Step 3
Tranfer to a bowl and let the mix cool.
Step 4
In a grinder, add all the soft spices first and blend.
Step 5
Next, add all the other spices. You can break the spices which are harder to grind.

Grate nutmeg into the grinder.

Grind all the spices into a fine powder.

Next, sieve the masala and store in an air tight container. Keep in the refrigerator for a longer shelf life.
