How To Make Perfect Idli Batter At Home
Here is an easy step-by-step method to make soft and fluffy idli batter at home:
Ingredients
Idli Rice: Four cups
Whole White Urad Dal: One cup
Fenugreek Seeds: One teaspoon
Thick Poha: Half a cup
Rock Salt: 1.5 tablespoons
Water: As needed for soaking and grinding
Step-by-Step Method
1. Rinse and Soak
Rinse the idli rice and poha 3 to 4 times each with enough water. Then soak both the ingredients together in a large bowl with lots of water for 5 to 6 hours.
Rinse urad dal and methi seeds separately in another bowl with sufficient water. Soak them for 5 to 6 hours in clean water. Suggestion: If you are living in a hot region, soak urad dal in cold water to avoid overheating of the mixer-grinder.

2. Grind to Perfection
Drain the soaking water from the dal. Transfer the dal and methi seeds to a heavy-duty mixer-grinder or wet grinder. Add ice-cold water gradually, half a cup and grind for 15-20 minutes until the batter becomes exceptionally light, fluffy, and doubles in volume. Pour into a large deep pot.
Drain the rice and poha mix. Add it to the grinder with minimal water. Grind until you get a slightly coarse, rava-like texture.
3. Mix and Aerate
Mix both rice flour and urad dal batters in the big pot.
Put in rock salt and mix the batters with your clean hands vigorously in circles for 2-3 minutes. The heat from your hands helps introduce the healthy bacteria into the batter.
4. Fermentation Time
Put the pan on top of the lid loosely.
Let it sit for fermentation in a warm and dark place for 8 to 12 hours. The batter will be fermented properly when its volume doubles up and it smells sour with bubbles.

5. Steaming the Idlis
Gently mix the fermented batter once or twice without overmixing it, since doing so would result in the loss of all the air pockets.
Apply oil or ghee to grease the idli moulds.
Fill the moulds with batter and cook the idlis in an already heated idli cooker on medium-high heat for 10 to 12 minutes.
Wait for 2 minutes and then remove the idlis from the mould using a wet spoon. Enjoy them hot with coconut chutney and sambar!
