Maharashtrian Thecha Recipe: How to Make Authentic Green Chilli-Garlic Chutney at Home

The Marathi word Thecha literally means ‘to pound.’ Unlike mainstream smooth chutneys, an authentic thecha is defined by its chunky, intensely aromatic, and coarsely hand-crushed texture. It is the ultimate flavour enhancer, traditionally paired with hot bhakri, pithla, or simple dal and rice. Making this classic condiment at home takes less than 15 minutes and requires only a handful of basic pantry staples.
Ingredients You Will Need To Make Thecha Chutney
150g of green chillies
One-fourth cup of whole peeled garlic cloves
Half a cup of raw peanuts
One teaspoon of cumin seeds
Two teaspoons of oil
One teaspoon of salt to taste
Thecha Chutney Step-by-Step Method
The entire secret to a stellar thecha lies in blistering the ingredients properly to extract their natural oils, followed by a coarse grind.
1. Prep the Chillies
Wash the green chillies thoroughly and wipe them completely dry with a kitchen towel. Remove their stalks. Crucial tip: Slit or break the chillies in half before throwing them into the pan so they don’t burst or pop from internal steam while cooking.
2. Blister the Chillies
Place a wide, heavy-bottomed pan or an iron tawa on high heat. Add the dry chillies directly to the hot pan without oil. Sauté them, stirring at regular intervals, until they are beautifully blistered and show distinct charred spots. Remove them onto a plate.

3. Toast the Cumin and Garlic
Turn the heat down to medium-low and pour 2 teaspoons of oil into the same hot pan. Toss in the cumin seeds and whole garlic cloves. Sauté frequently until the garlic softens slightly and develops light golden-brown spots. Transfer them to the plate with the chillies.
4. Crisp the Peanuts
Drop the raw peanuts into the residual oil in the pan. Toast them over medium-low heat, stirring constantly, until they turn crunchy and lightly blistered. Remove from heat and allow all the roasted ingredients to cool down for about 5 minutes.
5. Pound to Perfection
Transfer the blistered chillies, garlic, cumin, and peanuts into a heavy stone mortar and pestle. Add the salt. Pound the mixture firmly until it breaks down into a coarse, rustic texture.

Storage and Shelf Life
Because this recipe contains zero added water, it boasts a decent shelf life. Transfer your fresh thecha into a clean, airtight glass jar. It stays perfectly fresh in the fridge for 4 to 5 days. If your thecha turns out a bit too spicy for your tolerance, mix in a few drops of freshly squeezed lemon juice or a small splash of hot ghee to instantly mellow down the heat.
