Recipe of 3 Layers Vegetarian Biryani By Tarla Dalal

  1. Combine ingredients like 4½ cups of water, bayleaf, cinnamon, clove, cardamom, rice and salt in a deep non-stick pan and cover the lid. Cook on a medium flame for 10 to 12 minutes till the rice is cooked. 
  2. Strain the rice and keep it aside. 
  3. Heat oil in a deep non-stick pan and add cumin seeds. When seeds crackle add onion and saute for 1 to 2 mins till the color turns translucent. 
  4. Add the ginger-chilli paste, turmeric powder, coriander powder, chilli powder and garam masala and saute for a few seconds. 
  5. Add tomatoes and 2 tbsp of water. Mix well and cook on a medium flame for 4 to 5 minutes. 
  6. Now add the mixed vegetables, paneer, salt, and milk and cook on a medium flame for 2 to 3 minutes. Stir occasionally. 
  7. Mix sugar and cook on a medium flame for 1 more minute. 
  8. Take a bowl and combine curd, coriander and saffron color. Now add prepared rice mixture and mix well. 
  9. Transfer ½ of the rice mixture to a handi and spread it evenly with the back of the tablespoon. 
  10. On the top of it, add the mixed vegetable gravy and spread it evenly. 
  11. Top it with the remaining ½ of the rice mixture and spread evenly. 
  12. Pour ghee over it and cover with a lid.
  13. Place the handi on a non-stick tava and cook on a low flame for 25 to 30 minutes.

Ingredients

  • 1½ cups basmati rice
  • soaked and drained
  • 1 bayleaf
  • 25 cinnamon
  • 1 clove
  • 1 cardamom
  • Salt to taste
  • 1½ cups chopped and boiled mixed vegetables
  • 2 tbsp oil
  • ½ tbsp cumin seeds
  • ¾ cup
  • finely chopped onions
  • 2 tsp ginger-green chilli paste
  • ¼ tsp turmeric powder
  • 2 tsp coriander powder
  • 1 tsp chilli powder
  • ½ tsp garam masala
  • 1 cup roughly chopped tomatoes
  • ¼ paneer cubes
  • ¼ cup milk
  • A pinch of sugar
  • ¼ cup fresh curd
  • ¼ cup finely chopped coriander
  • A few drops of edible saffron color
  • 2 tbsp ghee
  • Fresh onions and cashew nuts for garnishing

Step

  1. Step 1:

    Combine the ingredients in a deep non-stick pan and cook on medium flame for 10 to 12 minutes until the rice is cooked.

  2. Step 2:

    Strain the rice.

  3. Step 3:

    Heat oil in a deep non-stick pan and add cumin seeds. Add onion and saute for 1 to 2 mins

  4. Step 4:

    Add the spices and sauté for a few minutes.

  5. Step 5:

    Add tomatoes and water followed by cooking for 4 to 5 minutes.

  6. Step 6:

    Now add the mixed vegetables, paneer, salt, and milk and cook on a medium flame for 2 to 3 minutes.

  7. Step 7:

    Add sugar and cook for 1 more minute.

  8. Step 8:

    Combine curd, coriander and saffron color. Now add prepared rice mixture and mix well.

  9. Step 9:

    Transfer ½ of the rice mixture to a handle and spread it evenly.

  10. Step 10:

    Add the mixed vegetable gravy and spread it evenly on the top of rice.

  11. Step 11:

    Top it with the remaining ½ of the rice mixture.

  12. Step 12:

    Pour ghee over it.

  13. Step 13:

    Cook on a low flame for 25 to 30 minutes.
