How To Make Radish Kimchi Fried Rice?

  • Start by chopping your radish kimchi and dicing the Spam into small pieces. If you’ve just cooked rice, spread it out on a large plate or tray to cool for around 10 minutes. This helps to dry out the rice, preventing it from becoming mushy during the frying process.
  • Heat a tablespoon of cooking oil in a large skillet or wok over medium-high heat. Add the sliced green onions and stir them for about 30 seconds until fragrant. Next, add the diced Spam to the pan, frying it until it turns golden brown and crispy.
  • Once the Spam is ready, toss in the chopped radish kimchi (kkakdugi) and sauté the mixture for another 2 to 3 minutes. This will help release the full flavour of the kimchi, adding a tangy depth to your dish.
  • Now, it’s time to season your dish. Add soy sauce, kimchi juice, sugar, gochujang (Korean chili paste), and a little water to the pan. Stir the ingredients well to combine the flavours.
  • Add the cooked rice to the pan, breaking up any clumps. Spread the rice evenly and let it cook, covered with a lid, until the moisture evaporates. This will allow the rice to crisp up at the bottom, creating a delightful texture.
  • For the final touch, drizzle sesame oil over the rice and stir well to enhance the flavours. Serve the fried rice in a wide, rimmed bowl, garnishing with sesame seeds, seaweed strips, and a sunny-side-up egg. Enjoy the rich and flavourful dish!
