Shahtoot! Or yummy, as I call it, due to alliteration and deliciousness, is the fruit of the summer season. Shahtoot, also known as Mulberry, is not only delicious and refreshing, but it is low in calories and contains lots of vitamins. It also contains compound zeaxanthin that keeps your retina healthy and prevents cataracts. So, this summer, surprise your loved ones with these easy desserts and indulge in its tantalizing taste!
Mulberry Pie
Give this Mulberry pie a try, and you’ll want nothing else all summer.
Ingredients
- 4 cups mulberries, washed and stems removed
- 1 cup of sugar
- ½ cup flour
- Double crust pastry
Instructions
- Preheat the oven to 400 degrees.
- Gently mix the prepared berries with sugar and flour in a bowl. Set aside while you prepare the pie crust.
- When the crust is finished, spoon the berries into the bottom crust and then arrange a lattice top crust.
- Bake for 15 minutes, then reduce the oven temperature to 350 and bake for an additional 45 minutes.
- To avoid a runny pie filling, cool pie completely before cutting it.
Mulberry Jam
Why to buy jam, when you can make it at home? The taste of tangy mulberries is perfectly balanced by the sugar and lemon juice makes it a perfect jam for your kids!
Ingredients
- 900 grams mulberries
- 6 cups of sugar
- ½ cup fresh lemon juice
- Pinch of freshly ground nutmeg
- 1 pouch liquid pectin
Instructions
- Wash jars in boiling water for 10 minutes to sterilize them.
- Mix the mulberries, sugar and lemon juice in a large bowl. (Do not use aluminum utensils as these can create off colours and flavours in your jam. Use Stainless steels.)
- Bring the mixture to boil over high heat, stirring constantly to prevent scorching and to help the sugar dissolve.
- Now add a pinch of freshly ground nutmeg and liquid pectin in it.
- Boil for 1 minute while stirring constantly. Remove from the heat.
- Skim off any foam that may have formed on the surface of the jam.
- Ladle the jam into the sterilized canning jars, leaving a ½ inch of headspace.
Black Mulberry Crumble Bar
Nothing can replace a classic mulberry crumble bar! Try this recipe and you will get an incredibly delicious, crunchy and sinful dessert to indulge in!
Ingredients
- 1 cup of sugar
- 1 tsp baking powder
- 3 cups flour
- ¼ tsp salt
- Zest of a lemon or orange
- 1 cup cold unsalted butter
- 1 egg
- 4-5 cups mulberries
- 2 tbsp lemon or orange juice
- 1/3 cup sugar
- 4 tsp cornstarch
Instructions
- Preheat the oven to 375 degrees.
- Grease a pan with butter.
- Stir the sugar, baking powder, flour, salt and zest in a bowl. Cut in the butter and egg using a fork. The mixture will form a crumbled bread-like texture.
- Divide the mixture in half.
- Press half the mixture in the bottom of the pan. Bake it for 10 minutes.
- Gently stir the mulberries with 1/3 cup sugar, juice and cornstarch.
- Spread the berry mixture over the warm crust, then crumble the remaining dough over the top.
- Bake for about 30 minutes, or until the top crust turns into brown.
- Let it cool down and Bon appetite!
