Ingredients

  • 375 grams of softened unsalted butter
  • 300 grams of powdered sugar
  • 225 grams of granulated sugar
  • 4 room temperature large eggs
  • 4 teaspoons of pure vanilla extract
  • 275 grams of self-raising flour
  • 1 teaspoon of baking powder
  • 120 mililitres of whole milk

Step

  1. Step 1:

    Preheat the oven to 180°C (350°F). Grease and flour two 20cm (8 inch) round cake pans.

  2. Step 2:

    In a large mixing bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract.

  3. Step 3:

    In a separate bowl, whisk together the flour and baking powder. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.

  4. Step 4:

    Divide the batter evenly between the prepared pans and smooth the tops.

    Bake for 25-30 minutes or until a toothpick inserted in the centre comes out clean. Allow the cakes to cool in the pans for 5 minutes before transferring to a wire rack to cool completely.

  6. Step 6:

    For the frosting, beat the butter and powdered sugar until smooth and creamy. Add the vanilla extract and beat until combined.

    Once the cakes are completely cool, place one layer on a serving plate and spread a layer of frosting on top. Place the second layer on top and frost the entire cake with the remaining frosting.
