Mediterranean Quinoa Salad is a perfect dish for health freaks who can’t compromise with taste. Here is a complete recipe to prepare this delicious and healthy treat.
Preheat the oven to 180°C. Mix all ingredients in a bowl except the chickpeas and whisk.
Marinate the chickpea in the mixture and roast in the oven for 10 minutes at 180°C.
Roast the red bell pepper at 240°C for 15 minutes and keep it aside for 10 minutes.
Peel off the skin, remove the seeds, and set the pepper aside to dry.
Blend all other ingredients coarsely and keep the mixture chilled.
Add marinated diced cucumber to it and assemble the salad. Garnish with black and white sesame seeds and a few sprigs of fresh parsley.
