Check out this easy Malai Chicken recipe and make it at home: 

  1. Take 500 grams of boneless chicken in a bowl, mix it well with some salt pepper, and lemon juice, and refrigerate for at least 2 hours.
  2. Soak 2 teaspoons of dried kasuri methi leaves in about 1/4th cup of water in a bowl or cup.
  3. After more than 2 hours of marination, take out the bowl of chicken from the refrigerator and keep it aside until it reaches room temperature. 
  4. Add 1 tablespoon of garlic, 2 tablespoons of ginger, and 5 tablespoons of boiled cashew nut paste, with ½ teaspoon of lemon juice and 2 tablespoons of fresh cream to the marinated chicken. Let it rest for about 20 minutes.
  5. Melt 3 tablespoons of butter in a saucepan on low-medium heat. Let it rest.
  6. In a separate heavy-bottomed pan, add 4 teaspoons of ghee and heat it on low-medium flame. Sprinkle cardamom powder made with 2 pods and the marinated chicken into the pan and let it cook for 10 minutes.
  7. To increase creaminess and consistency, baste the chicken with 3 tablespoons of melted butter occasionally. Add ½ cup of fresh cream after 10 more minutes of cooking.
  8. Stir occasionally until the gravy starts to boil. Let it cook until you see a semi-thick gravy.
  9. After straining the soaked methi leaves, add them to the gravy, mix well, and let it cook for about 2 minutes.
  10. Turn off the stove and leave the dish covered for about 10 minutes to thicken.
  11. Serve it with steaming hot chapattis or rice, green chutney, sliced onions, and relish!

Ingredients

Step

  1. Step 1:

    Mix boneless chicken pieces with salt, pepper, and lemon juice, and refrigerate for at least 2 hours.

    Soak some kasuri methi in water.

  3. Step 3:

    After marination, take out the chicken from the refrigerator and let it reach room temperature.

  4. Step 4:

    Add garlic, ginger, and boiled cashew nut paste, with lemon juice and fresh cream to the marinated chicken. Mix well and let it rest for 20 minutes.

  5. Step 5:

    Heat butter in a saucepan and keep it aside.

  6. Step 6:

    In another saucepan, heat ghee, add cardamom powder, and marinated chicken. Let it cook for 10 minutes.

  7. Step 7:

    Baste the chicken frequently with melted butter. Add fresh cream after 10 minutes of cooking.

  8. Step 8:

    Stir until gravy starts to boil until the gravy is semi-thick.

  9. Step 9:

    Strain soaked kasuri methi seeds, add them to the gravy, mix well, and cook for 2 minutes.

  10. Step 10:

    Turn off the stove and let the gravy thicken.

  11. Step 11:

    Serve it with chapatti or rice, green chutney, and onion.
