Be it gajar ka halwa or gajar ka ladoo, we love having it all. 

Today, we bring you an easy, gajar ki barfi recipe that is so easy to make and tastes delicious. It is once again festive time with Lohri and Makar Sakranti at the corner and how can we not prepare something sweet at home. Ingredients

  • 2 tbsp ghee
  • 4 cups grated carrot
  • 1 cup milk
  • ½ cup sugar
  • ½ cup full cream
  • ¼ tsp cardamom powder
  • Chopped dry fruits (almonds
  • pistachios
  • raisins)

Step

  1. Step 1:

    Take a kadhai and add ghee to it. Next add grated carrot to the kadhai.

  2. Step 2:

    Saute for 5 minutes. You will see the colour of the carrot changing.

  3. Step 3:

    Add 1 cup milk and stir.

  4. Step 4:

    Boil this for 5 minutes till the carrot starts to turn soft.

  5. Step 5:

    Add sugar and keep mixing so that it melts quickly.

  6. Step 6:

    Now time to add full cream to the mix. Keep stirring to ensure there are no lumps in the mixture.

  7. Step 7:

    Sprinkle cardamom powder to it and mix well.

  8. Step 8:

    Now take a tray and grease it with butter or ghee. Transfer the mixture to the tray and spread evenly.

  9. Step 9:

    Top with chopped dry fruits. Let it set for 30 minutes and then unmould.

  10. Step 10:

    Cut into square or diamond shape pieces. Your carrot barfi is ready. Store it in an air tight container.
