Korean Marinated Eggs, often known as Mayak Gyeran (which translates to ‘Drug Eggs’ because they are so addictive), are hard-boiled eggs soaked in a savoury, slightly sweet marinade. The marinade typically includes soy sauce, garlic, sesame oil, and a little sugar, creating a balanced profile of flavours. How To Make Korean Marinated Eggs
Step 1: Start by boiling your eggs. Fill a pot with water and add a pinch of salt. Place the eggs gently in the pot, then bring the water to a boil over high heat. Once it’s boiling, cover the pot and let the eggs cook for 7-10 minutes. Let them cool before peeling.
Step 2: While the eggs are cooling, prepare your stock. In a separate pot, bring water to a boil with kelp and radish. Let it simmer for about 20 minutes. Once it’s ready, take it off the heat and allow it to cool.
Step 3: In a bowl, combine soy sauce, sugar, and your cooled stock. Stir until the sugar has dissolved. Add the chopped garlic, onion, scallion, and sesame seeds. Stir everything together and taste - adjust the seasoning if needed.
Step 4: Carefully add the peeled eggs into the marinade. Allow them to soak for at least 2 hours, or up to 24 hours for deeper flavour.
Step 5: Once the eggs have marinated, serve them with steamed rice or hot noodles for a delicious meal.
