Korean Marinated Eggs

Korean Marinated Eggs, often known as Mayak Gyeran (which translates to ‘Drug Eggs’ because they are so addictive), are hard-boiled eggs soaked in a savoury, slightly sweet marinade. The marinade typically includes soy sauce, garlic, sesame oil, and a little sugar, creating a balanced profile of flavours. They’re a beloved snack, but they also make a fantastic side dish or topping for rice and hot noodles. This easy Korean Marinated Eggs recipe by Chef Chris Cho.

How To Make Korean Marinated Eggs

How To Make Korean Marinated Eggs

Step 1: Start by boiling your eggs. Fill a pot with water and add a pinch of salt. Place the eggs gently in the pot, then bring the water to a boil over high heat. Once it’s boiling, cover the pot and let the eggs cook for 7-10 minutes. Let them cool before peeling.

Step 2: While the eggs are cooling, prepare your stock. In a separate pot, bring water to a boil with kelp and radish. Let it simmer for about 20 minutes. Once it’s ready, take it off the heat and allow it to cool.

Step 3: In a bowl, combine soy sauce, sugar, and your cooled stock. Stir until the sugar has dissolved. Add the chopped garlic, onion, scallion, and sesame seeds. Stir everything together and taste - adjust the seasoning if needed.

Step 4: Carefully add the peeled eggs into the marinade. Allow them to soak for at least 2 hours, or up to 24 hours for deeper flavour.

Step 5: Once the eggs have marinated, serve them with steamed rice or hot noodles for a delicious meal.
