    How To Make Veg Quesadilla?

    • Saute peppers and onions in olive oil with some green chillies for two minutes.
    • Now, for bean puree, saute onions and garlic for a few minute. Then, add the black beans and kidney beans
    • Season it with salt and jeera powder. Top it with coriander leaves.
    • Add tomato puree to the mix and blend them together to make the bean puree.
    • Now, heat the tortillas on a pan/ grill.
    • Spread the bean puree onto the tortillas. Then sprinkle some pepper and onion mixture.
    • Like in sandwich, place one tortilla on top of the preparation.
    • Pan-fry till they turn nice and crispy.
    • Cut it in the shape of triangles and your tasty Quesadilla is ready. Serve it with your favourite dip.

    Ingredients

    • 2 Tbsp cooked kidney beans
    • 2 Tbsp cooked black beans
    • 2 Tbsp tomato puree
    • 1/2 tsp Mexican chilli powder
    • 1 small bunch chopped coriander
    • 2 Tbsp red bell pepper coulis
    • 3 cloves garlic
    • 1 chopped onion
    • 1/2 bell pepper
    • 1 green chilli
    • 1 onion
    • 1 pinch jeera powder
    • Salt
    • 2 tsp lime juice
    • 2 tortillas

    Instructions

    Step 1
    For two minutes, sauté peppers and onions in olive oil with a few green chilies.
    Step 2
    Now make a bean puree. For this, sauté the onions and garlic in a pan for a few minutes. After that, add the black beans and kidney beans.
    Step 3
    Season it with salt and jeera powder. Top it with coriander leaves.

    Add tomato puree to the mix and combine everything together to make the bean puree.

    Heat the tortillas in a pan or on a grill.

    Spread the bean purée on top of one tortilla. After that, add some of the pepper and onion mixture.

    Place one tortilla on top of the preparation, like a sandwich.

    Pan-fry till slightly brown and crispy.
