How to Make Pahadi Dahi Tadka: A Step-by-Step Guide

  • Begin by heating oil in a pan over medium flame. Add cumin seeds and asafoetida, allowing them to sizzle and release their aromatic oils.
  • Introduce finely chopped green garlic to the pan. Saute gently, letting the garlic infuse the oil with its pungent flavour.
  • Next, add diced onions to the mix. Stir frequently until they turn translucent, creating a fragrant base for your tadka.
  • It's time for the spice blend. Sprinkle in turmeric, salt, red chili powder, and coriander powder. Saute this aromatic mixture until the spices are well-combined and you can see small oil droplets forming on the surface.
  • Now for the star ingredient – slowly pour in the whisked yogurt. Stir continuously to prevent curdling, and let it simmer gently for 5-7 minutes. This allows the flavours to meld and the yogurt to absorb the spices.
  • Finally, garnish with a generous sprinkle of fresh coriander leaves. Serve hot and enjoy the creamy, spicy goodness!
