Masala Cheese Toast is a delicious, crispy snack made by spreading a spicy, flavourful masala mix on bread, topped with melted cheese. It's then toasted until golden and served hot for a satisfying treat. This easy Masala Cheese Toast is by Chef Ranveer Brar.

1. Start by preparing the filling for the toast. In a bowl, combine chopped green chilies, ginger, tomatoes, and coriander leaves. Add grated cheese, and a little oil, and mix everything together. Set it aside for later use.
2. Next, make the mayonnaise spread. In a separate bowl, mix together mayonnaise and green chutney. This spread will add a creamy and tangy flavour to your toast. Set it aside as well.
3. In another bowl, whisk together an egg, milk, gram flour, salt, and red chilli powder to make the egg mixture. Set this aside for later.
4. For the salad, combine chopped onions, cabbage, tomatoes, coriander leaves, green chilies, salt, and olive oil in a medium-sized bowl. Mix well. This fresh salad will add a crunchy side to your toast.
5. Now, take 4 slices of bread and spread the prepared mayonnaise mixture on both sides of each slice. Add the cheese masala filling to one slice, then place the other slice of bread on top to make a sandwich.
6. Heat some oil in a pan over medium heat. Meanwhile, dip each sandwich into the egg mixture, making sure it's well coated. Then, coat the sandwich with poha (flattened rice) and place it in the hot pan. Cook until both sides are golden brown and crispy.
7. Once cooked, remove the sandwiches from the pan. Serve your crispy masala cheese toast hot, alongside the fresh salad and your favourite sauce.
