Grilled Chicken Salad

Ingredients

For Grilled Chicken

  • 4 large chicken breasts
  • 2 lemons (juiced)
  • 50 ml olive oil
  • 2 large pods of garlic (minced)
  • 1/2 cup mint leaves (plucked and chopped) 
  • Salt and pepper to taste

For Grilled Veggie Salad

  • 2 zucchinis (thickly sliced lengthwise)
  • 1 sweet lime (cut into thick roundels)
  • 10 baby red radishes (sliced)
  • 3 plum tomatoes (cut into thick roundels)
  • 2 heads of lettuce
  • 2 Tbsp olive oil
  • Salt and crushed black pepper to taste

Instructions

  • Marinate the chicken breasts using all the ingredients.
  • Refrigerate it for two hours.
  • Once the chicken is marinated, grill each side for three minutes on medium heat.
  • Now, marinate the zucchinis and grill them.
  • Take all the veggies in a large bowl except lettuce and dress with olive oil, salt, and pepper. 
  • Now, arrange the torn lettuce leaves, grilled chicken and all the other veggies on a plate.
  • Your grilled chicken salad is now ready. 

Chicken Caesar Salad

Ingredients

For Caesar Dressing

  • ½ cup mayonnaise
  • 1 medium garlic clove (minced) 
  • 2 teaspoons lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Worcestershire sauce
  • ⅛ tsp fine salt
  • ⅓ cup parmesan cheese (grated)
  • 1 tbsp water
  • Freshly ground black pepper

For Caesar Salad

  • 6 cups lettuce (Chopped)
  • 1 pound boneless skinless chicken breasts (grilled and cut into strips)
  • ½ Cup parmesan cheese (shredded)
  • ½ cup seasoned croutons

Instructions

  • Take a large bowl. Add mayonnaise, garlic, lemon juice, dijon, Worcestershire sauce, and salt. Mix well.
  • Add parmesan cheese and water. Keep stirring. 
  • Season with black pepper
  • Your caesar sauce is now ready.
  • Cover four plates with lettuce.
  • Top it with all the remaining ingredients.
  • Drizzle with dressing and serve immediately.

Chicken Pasta Salad

Ingredients

For Salad

  • 4 boneless skinless chicken breasts (cut into strips)
  • 1½ tbsp olive oil
  • 4 garlic cloves (minced)
  • Black Pepper (grounded)
  • 350 gm fusilli pasta
  • 2-3 tbsp fresh thyme (chopped)
  • 2 tbsp Oregano or dried (chopped)
  • 2 cups Cherry Tomatoes (halved)
  • 1 yellow bell pepper (seeds removed and thinly sliced)
  • ½ cup green olives (sliced)
  • 1 medium red onion (sliced)
  • ⅓ cup parmesan cheese (grated)
  • Salt

For dressing

  • 4 tbsp extra-virgin olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • 1 garlic clove (minced)
  • red pepper flakes (crushed)
  • Salt
  • Black Pepper (grounded)

Instructions

  • Take a large bowl and add all the ingredients for the dressing. Mix well. 
  • Boil a pot of water and add some salt. 
  • Add the pasta to the water and cook it. 
  • After the pasta is cooked, drain the water and rinse it. 
  • Take a large bowl. Add one tbsp olive oil, garlic, oregano, thyme, salt, pepper and chicken strips. Mix well. 
  • Cook these chicken strips from both sides in a pan. 
  • Now, mix the cooked chicken strips and pasta in a large bowl. 
  • Add onions, cherry tomatoes, olives, parmesan cheese, pepper and salt.
  • Add salad dressing and mix well.
