Golgappa is an Indian snack that transcends borders and unites taste buds across India. But did you know that it has a multitude of monikers, each reflecting the unique flavour and culture of its region? Let's explore the different names and delightful variations of Golgappas across the states of India.
In North India, particularly in Delhi, Punjab, Jammu & Kashmir, Haryana, Madhya Pradesh, and Himachal Pradesh, this snack is known as Golgappa. The crispy Puris include a filling which is the perfect blend of potato, chickpea, and chutney, served with a delightful mix of spicy and minty water.
Popular as Puchka or Fuchka in West Bengal, Bihar, and Jharkhand, this snack includes Puri shells made with Atta, and the filling is a mix of boiled chickpeas and mashed potatoes, enhanced with Gondhoraj lime juice and zesty tamarind water.
In Maharashtra and Gujarat, there is an added twist to the Golgappas which is the use of white peas (Matra) in the filling, which blends perfectly with the tangy and spicy water.

In Uttar Pradesh, particularly in Kanpur and Lucknow, it is known as Pani Puri or Pani Ke Batashe. The filling includes boiled white peas and potatoes while the water is sweet and sour. Some parts of UP even have ‘Paanch Swaad Ke Batashe’ with five different types of water.
In Odisha and Hyderabad, Golgappas or Pani Puris are often known as Gup Chup, thanks to the playful sound they make when they burst into your mouth. The Puris there are a mix of whole wheat flour, refined flour, and semolina, and the filling features boiled potatoes, green chillies, and onions.
