1. To prepare bel sharbat, start by breaking the bel fruit with a rolling pin and scooping out the pulp using a spoon. Make sure to remove all the seeds, as they can be bitter. 
2. Mash the pulp with your fingers, ensuring there are no seeds left behind.
3. Next, add chilled water and gently mash it again. Strain the mixture through a sieve using a wooden spoon to extract as much pulp as possible while leaving behind the larger fibres. 
4. Add sugar to the strained pulp and stir until it dissolves completely. 
5. In a large container, place ice cubes and crushed mint leaves, then pour the juice on top. 

Mix it well, and serve the juice chilled. You may want to add a tiny pinch of salt for some extra flavour.
