Now that summer is formally over and winter is approaching, it’s soup season! Soups are the most comforting food to have on cold days. They taste delicious and are very tasty.

If you also like soup, here are three easy soup recipes that you’ll love:

1. Mushroom And Almond Soup

Mushroom And Almond Soup

Ingredients:

  • 1/2 cup milk
  • 2 tablespoon butter
  • 4 tablespoons maida
  • 1/2 cup soaked and peeled almonds
  • 50 gms wiped and finely chopped mushrooms
  • 4 cups water
  • 2 teaspoon salt
  • 1/4 teaspoon white pepper powder
  • 4 tablespoon cream

Method of Preparation:

  1. Chop two tablespoons of the almonds, and set them aside. Blend the remaining almonds and milk.
  2. Next, heat butter and oil. Add chopped almonds and mushrooms for a few minutes.
  3. Add maida, and cook it over low heat until it slightly changes colour.
  4. Add water a bit at a time, stirring constantly to get a smooth mixture. Make sure there aren't any maida lumps.
  5. After it boils, turn down the heat, add milk and almond mixture, salt, and pepper, and let it simmer for about four to five minutes. Keep stirring to avoid scorching.
  6. Garnish it with cream and serve hot.

2. Creamy Garlic Mushroom Soup

Creamy Garlic Mushroom Soup

Ingredients:

  • 3 minced garlic cloves
  • 450 gram mushrooms
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 2 cups vegetable broth
  • 1/8 tsp dried thyme
  • 1/2 cup heavy cream
  • 1/4 cup maida
  • Water
  • Butter
  • Salt
  • Pepper

Method of preparation:

  1. Slice half of the mushrooms and chop the remaining
  2. In a saucepan, add mushrooms, olive oil, and garlic. Add a dash of salt and pepper after that.
  3. Sauté until the liquid from the bottom of the saucepan has drained and the mushrooms are dark brown.
  4. After that, add flour and butter to the pan. Stir and cook for a few minutes.
  5. When the butter and flour form a thick paste, coat the mushrooms.
  6. Next, add the broth, water, and dried thyme. Stir continuously until the flour dissolves. Simmer the liquid till the flour thickens the broth.
  7. Add cream to the soup and stir. Serve hot.

3. Tasty Chicken Soup

Tasty Chicken Soup

Ingredients:

  • Butter
  • 25 grams plain flour
  • 2 sticks celery (finely chopped)
  • 2 sliced onions
  • 2 diced carrots
  • 1-litre chicken stock
  • 450g skinned, shredded and cooked chicken
  • 1 tablespoon chopped parsley
  • Salt
  • Black pepper

Method of Preparation:

  1. Melt butter in a pan and gently fry onions, celery and carrots until soft.
  2. Add flour and cook for two minutes.
  3. Add chicken stock and stir till the mixture comes to a boil.
  4. Season it with salt and pepper, then reduce the heat until the mixture is simmering and simmer until the vegetables are tender.
  5. After that, add cooked chicken and heat it thoroughly. Add parsley.
  6. Serve hot.
