Dhokla is one of the easiest dishes that are both healthy and delicious.  This is an authentic Gujarati dish that is basically prepared in two ways. However, today we will be looking at how to make instant rava dhokla with tricolours, ahead of Independence day.

  • Start by mixing the sooji with yoghurt in a bowl let it sit for 15 minutes. 
  • Then puree both the carrot and spinach separately and store in two bowls.
  • Then divide the sooji mixture into three equal parts. Mix one each with spinach and carrot puree for orange and green colours.
  • Now, take the different colours and mix them separately with water for medium flow consistency.
  • Next, add 1/2 sugar and baking soda, mix well and transfer one layer at a time to the steaming container after greasing it with oil.
  • Steam each layer for 5 minutes, let it sit at room temperature and then remove it with the help of a knife.
  • Further, in a pan prepare the tempering with mustard seeds, asafoetida and green chillies, then add a mixture of lemon juice, sugar and water to the tempering.
  • Finally, add the tempering to the dhokla and voila!

Ingredients

  • 1 1/2 Cup Sooji/Semolina
  • 3/4 Cup Yoghurt
  • 1 1/2 Tsp Salt
  • 1/2 Cup Water
  • 1 Carrot Pureed For Saffron Layer
  • 1/4 Cup Green Chutney Or Spinach Puree For Green Layer
  • 1/2 Tsp Sugar 3 For Three Layers plus 1 Tsp
  • 1/4 * 3 Tsp - Baking Soda 3 For Three Layers
  • Water As Needed
  • Oil For Greasing Cups
  • 1 Tbsp Oil
  • 1 Tsp Mustard Seeds
  • 1/2 Tsp Asafoetida Hing
  • 3 to 4 Green Chillies Adjust To Taste
  • Few Curry Leaves
  • 1 Tbsp Lemon Juice

Instructions

Step 1
Mix sooji and yogurt and let them sit for 15 minutes.
Step 2
Puree carrot and spinach and store separately.
Step 3
Divide sooji mixture into three parts and then add one each part to the carrot and spinach mixture.
Step 4
Add water to each colour batter and pour in greased dish inside steamer.
Step 5
Steam for 5 minutes and pour another layer over it.
Step 6
Steam each layer for 5 minutes and finish with orange colour on top.
Step 7
Finally, prepare the tempering with mustard seeds, asafoetida and green chillies add some water, salt and sugar solution on top of it.
Step 8
Pour the tempering over dhokla and your tricolour dhoklas are ready!
