Ingredients

  • Water
  • 2 Tbsp. Oil
  • 1 Tsp Mustard Seeds
  • 1/2 Tsp Cumin Seeds
  • 1/4 Tsp Asafetida
  • 1 Tbsp. Ginger
  • 3 Green Chillies (Slit)
  • 10-15 Fenugreek Seeds
  • 3 Tbsp. Gram Flour
  • 1/2 Tsp Turmeric powder
  • 1 Tsp Red Chilli Powder
  • 1 Cup Tomato Puree
  • Water
  • 1 Tbsp. Salt
  • 1 Sprig Curry Leaves
  • 1/2 cup Drumsticks
  • 1 Potato (Peeled & Chopped)
  • 1/4 Cup Chickpeas (Boiled)
  • 1/2 cup Cluster Beans
  • 1/2 Cup Lady Finger (Fried)
  • 1 Tbsp. Tamarind

Step

  1. Step 1:

    Take a pan, add oil and heat it.

  2. Step 2:

    Once the oil is hot, add mustard seeds, cumin seeds, asafetida, ginger, green chillies and fenugreek seeds.

  3. Step 3:

    Stir it well and add gram flour. Cook on low flame for 2-3 minutes till its nutty.

  4. Step 4:

    Add turmeric powder and red chilli powder. Mix it well for some time.

  5. Step 5:

    Add tomato puree and stir it. Allow this to cook on medium flame for 2-3 minutes. Add some water and stir well. Add salt according to taste.

  6. Step 6:

    Add drumsticks, chickpeas, okra, cluster beans and potatoes. Also, add some curry leaves.

  7. Step 7:

    Allow this to simmer on low flame for 15-20 minutes. Add soaked tamarind and give a quick stir.

  8. Step 8:

    Let it cook for some more time. Sindhi tomato curry is now ready to be served.
