Christmas being just around the corner, the plum cake is something you can’t miss from your spread for the evening. Here’s an easy guide to help you through the process of making a delicious plum cake!
Easy Guide-
- Mix all the dry fruits in a jar and soak in juices alternatively.
- Soak for a good amount of time, well in advance.
- Take butter and brown sugar in a separate bowl and beat it nicely until it turns creamy.
- Add a bit of oil and curd as curd is our replacement for an egg.
- Continue to beat until it turns into something like a frosting.
- Add maida, almond powder, baking soda, baking powder, salt, clove powder, and cinnamon powder.
- Now add the soaked dried fruits to your mixture.
- Transfer the batter into a tin container and set it for 1.5 hours into the oven to bake into a beautiful cake.
Your cake is then ready to be served to your loved ones.

Ingredients
- 100 grams dates / khajoor (chopped)
- 100 grams raisins / kishmish
- 50 grams tutti frutti (green)
- 50 grams tutti frutti (red)
- 200 grams mixed berry
- 100 grams fig (chopped)
- 50 grams apricot (chopped)
- 200 ml grape juice
- 250 grams butter (softened)
- 300 grams brown sugar
- 50 grams oil
- 130 grams curd
- 300 grams maida
- 50 grams almond powder
- ¼ tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- ¼ tsp clove powder
- ¼ tsp cinnamon powder
- 2 tbsp pistachios (chopped)
- 2 tbsp cherry (chopped)
- 2 tbsp cashew
Instructions
- Step 1
- Firstly, in a glass jar take 100 grams dates, 100 grams raisins, 50 grams tutti frutti, 50 grams tutti frutti, 200 grams mixed berry, 100 grams fig and 50 grams apricot.
- Step 2
- Soak in 200 ml grape juice. you can alternatively soak in orange juice, apple juice, brandy or rum.
- Step 3
- Mix well and soak for at least 8 hours or until the dried fruits absorb all the juice.
- Step 4
- In a large bowl take 250 grams butter and 300 grams brown sugar.
- Step 5
- Beat well until the butter and sugar turn creamy. If you do not have access to brown sugar then Use white sugar. adding brown sugar makes cakes moist and gives a good colour.
- Step 6
- Now add 50 grams of oil and 130 grams curd. Since we are not adding the egg, the curd is a good replacement for eggs.
- Step 7
- Continue to beat until the mixture turns creamy like frosting.
- Step 8
- Further, add 300 grams maida, 50 grams almond powder, ¼ tsp baking soda, 1 tsp baking powder, ¼ tsp salt, ¼ tsp clove powder and ¼ tsp cinnamon powder.
- Step 9
- Using a spatula, mix using cut and fold method. do not over mix as the cake turns chewy then.
- Step 10
- Now add soaked dried fruits. make sure the dried fruits have absorbed all the juice, else drain off the juice and add dried fruits.
- Step 11
- Also, add 2 tbsp pistachios, 2 tbsp cherry and 2 tbsp cashew.
- Step 12
- Mix gently, making sure the dried fruits are well combined.
- Step 13
- Transfer the fruit cake batter to a cake tin. Use a tin of dia, make sure to line a butter paper at the bottom to prevent it from sticking.
- Step 14
- Also tap twice to level up uniformly and remove any air bubbles if present.
- Step 15
- Place the cake pan into the preheated oven and bake at 160 degrees for 1.5 hours.

- Insert a toothpick and check if the cake has baked completely.

- Cool the cake and then unmold the christmas cake.
