Pepper Chicken Recipe Step-By-Step
- Make this easy step-by-step pepper chicken recipe at home with authentic South Indian flavours.
- Take a kadhai (wok), heat some coconut oil in it, add some fennel seeds and let them roast.
- Next, add some chopped onions, green chillis, and curry leaves to the oil and saute them until they turn golden brown.
- Now, add 2 tablespoons of ginger garlic paste, readymade or homemade, to the wok. Saute it for about 2 minutes until the raw garlicky smell goes away.
- Spice up the vegetables by adding salt, turmeric powder, coriander powder, and garam masala. Mix them well until they radiate aroma.
- Now add the marinated chicken pieces and mix them with the cooked masala. Ensure that the chicken gets fully coated with spices and oil.
- Keep the flame on low and let it cook for about 20 minutes, or until the chicken is cooked.
- Once the chicken is cooked, increase the flame levels to dry the gravy, if you want to eat dry pepper chicken, if not, leave the flame as it is.
- Ensure that the masala has coated the chicken properly.
- Add some coarse or finely ground black pepper for a savoury strong flavour and mix it well.
- Add some lemon juice for a tangy flavour and coriander leaves for garnishing.
- Serve with hot chapattis or South Indian parotta.
