Ingredients For Moringa Soup
- 2 cups Drumsticks/Moringa Stalks cut into 2 inch pieces
- 2 teaspoons ghee/oil
- ½ teaspoon cumin seeds
- ¼ to ½ teaspoon black pepper powder
- 1 chopped tomato
- 1 inch sliced ginger
- ½ teaspoon turmeric powder
- Salt to taste
- Chopped coriander leaves/moringa leaves
- ¼ cup Indian small gooseberries (Optional)
Moringa Soup Recipe
- Start by washing and cutting fresh drumsticks into 2-inch pieces. Then, chop up some tomatoes and cut a piece of ginger into big chunks.
- Add 2 cups of moringa stalks, ¼ cup of gooseberries, 1 chopped tomato, and a small piece of ginger to a pressure cooker. Pour in enough water to cover everything. Cook for 4 whistles or 5 minutes on low heat after the first whistle. If you're using an Instant Pot, cook on high pressure for 3 minutes, then let the pressure release naturally.
- Once the pressure has dropped, open the cooker and carefully pour the cooked ingredients into a saucepan through a sieve. Use a ladle or big spoon to mash everything in the sieve, squeezing out as much pulp as possible. If needed, add a little water to help get all the pulp through the sieve.
- Add salt to taste and half a teaspoon of turmeric to the moringa broth, stirring well to combine. Bring the mixture to a boil, then reduce the heat and let it simmer for just 2-3 minutes. Now it's time for tempering!
- In a small pan, heat 2 teaspoons of ghee/oil over medium heat. Add half a teaspoon of cumin seeds and half a teaspoon of black pepper powder. As soon as the spices start to sizzle, carefully pour the mixture into the hot soup.
- Finish the soup with a sprinkle of freshly chopped cilantro or, if you have them, some fresh moringa leaves. Serve the soup steaming hot, and add a squeeze of lemon or lime juice.
