Mozzarella Cheese Stick

Ingredients

  • ¼ cup flour
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 tbs milk
  • 1 lb mozzarella cheese, cut into 3/4 inch x 3/4 inch strips (or you can use string cheeseand cut each in half)
  • 1 cup vegetable oil
  • 1 cup pizza sauce

Method

  • Whisk eggs and milk together.
  • Coat each piece of cheese with flour, then dip in egg and then roll in bread crumbs.
  • Dip in egg and crumbs again.
  • Freeze before frying.
  • Heat oil in a skillet and cook sticks for about a minute on each side, or until golden andbefore the cheese starts to leak.
  • Drain on paper towels.
  • Serve with tartar sauce for dipping.

Apple Pie

Ingredients

  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 3 tbsp all-purpose flour
  • 1 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 6 to 7 cups thinly sliced peeled tart apples
  • 1 tbsp lemon juice
  • Pastry for double-crust pie (9 inches)
  • 1 tbsp butter
  • 1 large egg white
  • Additional sugar

Method

  • In a small bowl, combine the sugars, flour, and spices; set aside.
  • In a large bowl, tossapples with lemon juice.
  • Add sugar mixture; toss to coat.
  • Line a 9-inch pie plate with bottom crust; trim even with edge.
  • Fill with apple mixture; dotwith butter.
  • Roll remaining crust to fit the top of pie; place over filling.
  • Trim, seal and flute edges.
  • Cut slits in crust.
  • Beat egg white until foamy; brush over crust.
  • Sprinkle with sugar.
  • Cover edges looselywith foil.
  • Bake at 375° for 25 minutes.
  • Remove foil and bake until crust is golden brown and fillingis bubbly, 20-25 minutes longer. Cool on a wire rack.

Potato Salsa

Ingredients

  • 1/3 cup fat-free mayonnaise.
  • 2 tablespoons fat-free sour cream.
  • 1/4 cup salsa.
  • 1 tablespoon minced fresh parsley.
  • 3 cups unpeeled potatoes (cut in round shaped).
  • 1 celery rib thinly sliced.
  • 1/4 cup chopped onion.
  • 1/2 cup shredded reduced-fat cheddar cheese.

Method

  • Heat oven to 400°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In a bowl, combine the mayonnaise, cheese, sour cream, salsa, and celery.
  • In a large bowl, combine the potatoes, celery, and onion.
  • Stir in salsa, sour cream, andcheese until well blended.
  • Bake 35 minutes or until potatoes are tender.
  • Sprinkle with cilantro.
  • Let stand 5minutes before serving (sauce will thicken as it stands).
