Pine Nut Noodles or Jat-guksu is a popular Korean noodle dish made with buckwheat noodles or wheat flour in a bowl of cold broth that is prepared from pine nuts. A tasty and nutritious traditional Korean cuisine is jat-guksu made with pine nuts. 

Jat-guksu is a light and cold Korean noodle dish. Pine nuts are a popular garnish ingredient in Korean cuisine, and they are known for their rich flavour and nutritional benefits. The noodles are refreshing and light, and the savoury broth adds a satisfying depth of flavour.

In the popular Korean drama ‘Start Up’ that was released in 2020, we saw Han Ji-pyeong (role played by Kim Seon-ho) eating these noodles happily. Here is an easy recipe for Pine Nut Noodles given below that you can try at home: 

How To Make Pine Nut Noodles

1. First in a bowl, combine the flour, salt, and water with a wooden spoon. After that, form a ball with your hands. 

2. Knead the dough a few times to see whether you need additional water and, if so, add a little extra. To ensure that it becomes a good dough, knead it for around 5-7 minutes. Give it at least 30 minutes to rest before covering it with plastic wrap. 

3. Roll out the dough into a long, thin rectangle on a surface dusted with flour.

4. Sprinkle the dough with flour to prevent it from sticking to itself when rolled up. To unfold and release the noodles, fold the dough over and use a knife to cut carefully. The noodles should be separated and well-dusted with flour. Add extra flour if necessary. Uncover them and leave them until you're ready to cook them.

5. Now add the sesame seeds, salt, and water to a blender along with the roasted pine nuts and blend for two to three minutes. Blend again after adding 1 cup of almond milk. Through a sieve, filter the nut milk. Then put the prepared pine nut milk in the refrigerator for at least 1 hour. 

6. Now in a bowl add chopped carrots, onions, and cucumber with some salt and black pepper. Squeeze out excess liquid from them by hand. Sauté in a lightly oiled skillet over medium-high heat for 1- 2 minutes. 

7. Boil noodles for 2-4 minutes in unsalted water.

8. Put everything together in a bowl. Then add the pine nut milk (which can be heated up) over the noodles and top with veggies. 

9. Your Pine Nut Kalguksu Noodles are ready. Serve it and enjoy it with your family.

Ingredients

  • 1 cup wheat flour
  • 1/2 cup pine nuts
  • 1 cup almond milk
  • 1 tbsp roasted sesame seeds
  • 1 tsp maple syrup (optional)
  • 1 tbsp sesame oil
  • 1 cup chopped carrot
  • 1 cup chopped cucumber
  • 1 cup chopped onion
  • 2 cup water
  • salt as per taste

Step

  1. Step 1:

    In a bowl, add the flour, salt, and water and form a dough of it. Knead the dough for 4-5 mintues and then cover it with a plastic wrap.

  2. Step 2:

    Roll out the dough into a long, thin rectangle on a surface dusted with flour.

  3. Step 3:

    To keep the dough from clinging to itself when rolled up, lightly sprinkle it with flour. Fold the dough over and make a clean cut with a knife to release the noodles and let them unfold. Separate the noodles and lightly coat them with flour. If more flour is required, add it. When you're ready to cook them, uncover them and leave them.

  4. Step 4:

    Now combine the roasted pine nuts, sesame seeds, salt, and water in a blender. Process for two to three minutes. After adding 1 cup of almond milk, blend once more. The nut milk should be passed through a sieve. After that, chill the prepared pine nut milk for at least an hour.

  5. Step 5:

    Now mix some salt and black pepper in a bowl with the chopped carrots, onions, and cucumber. By hand, squeeze any extra liquid from them. For 1-2 minutes, saute over medium-high heat in a pan that has been gently greased.

  6. Step 6:

    Boil noodles for 2-4 minutes in unsalted water.

  7. Step 7:

    Now put the boiled noodles, pine nut noodles and vegies in the bowl all together and its ready to serve.
