4-5 Idlis
1/2 Teaspoon cumin seeds
1/2 Teaspoon mustard seeds
1/2 Teaspoon red chilli powder
1/3 Teaspoon dry mango powder
1 Teaspoon sambar masala powder
10-15 leaves curry Leaves
Salt as per taste
2 Tablespoon sunflower oil/Cooking oil

Step 1: Prepare Idlis
Take refrigerated idlis or prepare fresh ones and refrigerate for 2-3 hours. Cut them into slices for better coating and frying.
Step 2: Heat Oil and Spices
Heat 2 tablespoons of oil in a pan over medium flame. Add mustard seeds, cumin seeds, and curry leaves. Fry for 10-12 seconds.
Step 3: Fry Idlis
Add idli slices to the pan and stir softly for 2-3 minutes, keeping the flame medium. This will make the idlis crispy outside and soft inside.
Step 4: Add Masala
Add red chilli powder, sambar masala, salt, and dry mango powder to the frying idlis. Reduce flame to low-medium and fry for 3-4 minutes, stirring occasionally.
Step 5: Serve Hot
Fry the idlis to your desired colour (golden brown to dark brown). Before turning off the flame, increase it to medium for 45 seconds. Serve hot and enjoy!
