Veg Biryani Kebabs
Veg Biryani Kebabs are a tasty twist on the classic Indian biryani. Instead of layering rice and vegetables in a pot, all the flavours are mixed into a kebab form and then shallow-fried. They're crispy on the outside, soft, and spiced on the inside. Check out this Veg Biryani Kebab recipe by Chef Kunal Kapur.
How To Make Veg Biryani Kebab
1. In a large bowl, combine the vegetable biryani, mashed potato, grated cheese, coriander leaves, green chillies, and salt. Make it firm enough to shape into kebabs without falling apart.
2. Divide the mixture into equal portions and shape them into small patties or oval kebabs.
3. Now make a thick batter, take some plain flour in a bowl. Add a little water and salt, then mix well until you get a smooth and thick consistency.
4. On a separate plate, spread out some breadcrumbs. Now, take each kebab and dip it into the flour batter, making sure it’s fully coated. Then roll it in the breadcrumbs so it’s nicely covered all over.
5. Heat a non-stick pan with a little oil and shallow-fry the kebabs on medium heat until golden brown and crisp on both sides.
6. Serve them hot with mint chutney or tamarind chutney.
