1. Start by peeling the onions and slicing them into ½ cm thick. It’s important to slice them into thin, even rings to get that signature laccha texture. You can use a sharp knife or a mandoline slicer to ensure uniformity. After slicing, soak the onion rings in a bowl of water with a few ice cubes for about 10 minutes.
2. Now in a medium-sized bowl, mix together Kashmiri red chilli powder, chaat masala, coriander powder, garam masala, black salt, and salt. Mix them properly and keep them aside. This will be the base masala giving the salad its characteristic kick and tang.
3. Take the onion rings out of the cold water and let them sit in a sieve for a few minutes to drain.
4. Now on a bowl/ deep serving platter put the onion rings, add the prepared masala base, chopped coriander leaves, and chopped green chillies, squeeze some lemon, and toss them together. Mix everything thoroughly with the onions, ensuring the onions are well coated with the seasoning.
