1. Soak the black beans in water for the entire night to start preparing the Bhatt Ki Churkani.
2. Put a tablespoon of ghee in a heated kadai over medium heat, and when it begins to melt, add the wheat flour. Roasting the flour more will turn it a light brown colour. Once it turns a light brown colour, remove it and set it aside.
3. Heat the oil in the pressure cooker over medium heat. Add the cumin seeds and let them crackle.
4. Add the diced tomatoes, onion, and ginger paste; saute until the onions start to become transparent.
5. After the onions are just browned. Mix thoroughly after adding the soaked black beans, water, and spice powders (turmeric, red chilli powder, garam masala powder, coriander powder) and salt to taste. Now add at least 2 cups of water to the dal so that they are thoroughly submerged in water.
6. Let it cook for 5 to 8 whistles, or for around 30 minutes, or until the Bhatt Ki Churkani is cooked through. After finishing, switch off the heat and let the pressure drop naturally.
7. After the mixture is released, add the wheat flour and stir till the Bhatt Ki 8. Churkani is thoroughly mixed. If necessary, add a small amount of water and stir till the Bhatt Ki Churkani Dal thickens.
9. When completed, remove the Bhatt Ki Churkani dal from the heat and place it in a serving bowl.
10. Serve Bhatt Ki Churkani dal with rice and a delicious side dish.

Bhatt Ki Churkani Dal: A nutritious treat from the Pahari Cuisine
Begin making this dal by soaking the black beans overnight with water or you can even cook it in a pressure cooker.
Then take a medium-sized pan and some ghee, once it melts add the wheat flour to it. Keep it aside once the colour changes to light brown.
Then take a pressure cooker, add some oil, and add the cumin seeds to it. After the seeds are done crackling add the chopped tomatoes and onions to it, and stir it till they turn translucent.
Then add the soaked black beans along with turmeric powder, red chili powder, garam masala, and ginger-garlic paste with 2 cups of water.
Cook it for 4-7 whistles or until the Bhatt is softened and is cooked completely.
After that add the wheat flour and keep mixing it with the dal so that it can mix well. Add some water if required to add thickness to it.
