  1. Dry roast the nuts on high flame until golden brown. Let them cool down the transfer to a mix jar. Grind them to get a coarse mixture and set it aside. Now add dates to the mixer and add a little water.
  2. Blend to form a paste consistency and keep it aside. Now take a bowl and mix dates paste and nuts mixture. Add ghee and mix well. Keep it aside. Make sure the mixture doesn't stick much.
  3. Take a separate bowl and mix rice flour and salt. Boil water until it bubbles and add it to the rice flour. Mix with a ladle and once it starts to come together, set it aside for a few minutes until it is warm enough to handle with hand. Now bring everything together to form a smooth dough.
  4. Grease the mould with ghee and make a lemon-sized dough and roll it into a ball. Close the mould so it takes the size of a modak. Now nicely press it along the sides in the inner part, leaving a centre hole for the stuffing.
  5. Now roll the dry fruit mixture into a small cylinder and insert it into the modak. Seal it with a little dough.
  6. Open the mould and carefully remove it. Follow the same process for all the modaks with stuffing.
