Eggs Kejriwal is nothing but freid eggs served on top of a toast. This easy to make and delicious egg dish is made with a layer of cheese topped with finely chopped chillies. Served on top of a warm and crisp toasted bread or a bun, the dish finds its roots in the name of Mr. Devi Prasad Kejriwal who is believed to be enjoying this dish on a daily basis at Mumbai’s Willingdon Sports Club. Folklore says that the dish got so popular that it became a part of the club’s main menu and was named, ‘Eggs Kejriwal’ after its connoisseur.

Quick And Easy Steps To Whip Up An ‘Eggs Kejriwal’ At Home:

  • Heat a pan and toast the two bread slices on it by applying a little butter on them. 
  • Place them aside on a plate, once the toasts are golden brown.
  • Now, add a little more butter in the same pan and fry

     

    two eggs sunny side up until they reach a desired gooey consistency.
  • Put the eggs aside on a plate.
  • Add chopped onions and green chillies in the pan and sauté them.
  • Place the toasted bread slices on a plate and spread the onions and green chillies on it.
  • Next add grated mozzarella or parmesan cheese on top of the onion and green chillies.
  • Place one fried egg on each toasted slice of bread. 
  • Top this with onion and cheese.
  • Now sprinkle salt and pepper as per your taste over the eggs.
  • Serve the ‘Eggs Kejriwal’ piping hot with tomato ketchup and coriander chutney.

  • One tablespoon fresh and finely chopped coriander
  • Salt and black pepper to taste
