Ingredients

    One cup of yellow moong dal (split yellow lentils), one green chilli (chopped), one-inch piece of ginger, two tablespoons of curd (yoghurt).

    One tablespoon of lemon juice, one teaspoon of fruit salt (eno), salt to taste, one-fourth teaspoon of turmeric powder, water as needed.

For Tempering

    One teaspoon of oil, one teaspoon of mustard seeds, one teaspoon of sesame seeds, a handful of curry leaves, two to three green chillies (split), a pinch of asafoetida (hing), two tablespoons of water.

Soak & Grind

    Rinse and soak moong dal for two to three hours in water. Further, drain and blend into a smooth batter. Mix ginger, green chilli, curd, and water.

Prepare The Batter

    Next, transfer the batter into a bowl. Add turmeric, lemon juice, and salt. Remember, before steaming, add fruit salt and mix gently in one direction.

Steam The Dhokla

    Grease your dhokla tray and pour the batter in it. Steam it in a steamer for 15-20 minutes. Make sure to check with toothpick, if it comes out clean, it is done.

Tempering

    Heat oil in a small pan. Further, add mustard seeds, sesame seeds, hing, curry leaves, and green chillies. Once they crackle, add a spoonful of water and let it sizzle. Pour the tempering over the dhokla.

Serve

    Let the steamed dhokla cool down slightly. Cut into squares and serve with green chutney or curd.
