According to Dr Sonia Gandhi, Head, Department of Dietetics and Nutrition, Fortis Hospital Mohali, “Sourdough and regular bread differ in how they’re made, their nutritional value, and how they affect digestion. Sourdough is made through natural fermentation using wild yeast and Lactic acid bacteria, while regular bread uses commercial yeast for a faster rise.”
One major advantage of sourdough is its digestibility. The long fermentation process breaks down gluten and phytic acid, which can make it easier on the stomach and help the body absorb more nutrients. It also has a lower glycemic index, meaning it causes a slower rise in blood sugar compared to most regular breads.

In terms of taste, sourdough has a tangy, complex flavour and a chewy crust, while regular bread is usually softer, milder, and quicker to prepare. Some people prefer the lightness of regular bread, but sourdough offers a richer texture and deeper taste.
“Nutritionally, sourdough often comes out ahead due to fewer additives, natural fermentation, and potential gut health benefits. However, it takes more time and effort to make,” says Dr Sonia.
In the end, sourdough may be the better choice for those seeking a healthier, more natural option, while regular bread suits those who prioritise convenience and softness.
