Ingredients
To make an instant veg cutlet you need 1 inch finely chopped ginger, 2-3 green chilli, a beetroot, a carrot, and 5-10 French beans.

Ingredients for coating
For coating to fry cutlets you need, ½ cup refined flour, 1 tsp degi red chilli powder, salt to taste, water as required, 1 cup white bread crumb (for coating), and oil for shallow fry.

Cutlet preparation
This recipe is straight from chef Ranveer Brar’s kitchen. Heat oil in a pan, and sauté ginger, and green chilli. Add beetroot, carrot, beans, peas, spices, and cook.

Mix
Mash the potatoes and mix them with cooked veggies, bread crumbs, and coriander powder. Shape the mixture into a diamond shape.

Coating
To Coat the potato mix make slurry from flour, spices and water as required to make a smooth and thick paste. Add bread crumbs and stir once.

Fry
Coat the cutlets with slurry and shallow-fry them in hot oil until they turn a golden brown on both sides.

Garnish with love
Garnish with onion rings and mint sprig and serve hot with ketchup or green chutney with a cup of tea.
