Thandai paste

    To make thandai paste you need 20 almonds, 15 Cashew nuts, 15 Pistachios, 1 ½ Melon Seeds/Magaz, 1 tbsp Poppy seeds/Khuskhus, 1 tbsp Fennel Seeds/Saunf, 1 tbsp Peppercorn and 4-5 Cardamom pods (shell removed).

Spiced milk

    To make spiced milk of thandai, you need ½ ltr milk, boiled, ½ tsp nutmeg powder, 1 tsp cardamom powder and 2 tbs sugar.

More ingredients

    More ingredients you need for a thandai recipe are 200 gms mawa cake, ½ cup mixed nuts, chopped Pistachio and almonds, 2 cups whipped cream, 2-3 tbs of strawberry syrup and 1 cup sweet boondi to garnish.

Blend it

    This recipe is straight from the Ranveer Brar’s Kitchen. Blend 2-3 hours soaked almonds, cashew nuts, pistachios, melon seeds, poppy seeds and fennel seeds with Peppercorn and Cardamom in a smooth paste and add whipped cream to the pase.

Spiced milk

    Refrigerate the thandai paste. Meanwhile, prepare the spiced milk. Mix well warm milk, nutmeg powder, cardamom powder and sugar. Soak the mawa cake in milk for a few minutes.

Put everything together

    In a mason jar, pour some strawberry syrup, add mawa cake milk and chopped nuts and then pour a whipped cream paste. Your homemade thandai is ready.

    Garnish the refreshing thandai with some boondis. Enjoy the festival of colours with a glass full of thandai and dance your heart out.
