  • Heat some oil in a pan and add garlic, ginger, and jalapenos to it. Saute them for 4-5 minutes add lemongrass and saute for 2 more minutes. 
  • Now to this add some veggie broth lime leaves, salt, and broccoli and heat them until the mixture boils.
  • Cover and cook them for 12 minutes until the broccoli is tender.
  • Let the mixture cool then place the soup back over the heat on a low flame.
  • Then add the coconut cream and give it a good stir. 
  • Finally, add sugar, salt, lime juice and garnish with some jasmine rice, cashews and basil there you go!

Ingredients

  • 2 Heads Of Broccoli Diced
  • 2 Limes(Zest And Juice Each)
  • 2 Scallions Diced
  • 1 Clove Of Garlic
  • 1/4 Cups Lemongrass
  • 1 Medium Sized Jalapeno
  • 1 Small Piece Of Ginger
  • 3 Tablespoons Coconut Cream
  • 4Cups Veggie Broth
  • 1 Dash Ground Cumin
  • 4 Lime Leaves
  • 1 Dash Kosher Salt
  • Shredded Coconut
  • Toasted Cashews
  • Jasmine Rice
  • Thai Basil

Instructions

Step 1
Heat the oil in a pan and saute garlic, ginger and jalapenos along with lemongrass for 5 -7 minutes.
Step 2
Now add veggie broth, lime leaves, salt, broccoli and cook till broccoli becomes tender.
Step 3
Cool down the mixture and then heat on a low flame.
Step 4
Stir in the coconut cream.
Step 5
Add the sugar, salt, lime juice and garnish with shredded coconut, jasmine rice and cashews to serve!
