Ingredients

  • 1/2 Cup Rice
  • 1 Cups Water
  • 1/2 Cup Shredded Zucchini (with skin)
  • 1/2 Tablespoon Of Oil
  • 1/2 Teaspoon Of Butter
  • 1/4 Teaspoon Cumin Seeds
  • 1/4 Teaspoon Black Mustard Seeds
  • 2 Red Peppers Whole
  • 1-2 Bay Leaves
  • 1/4 Teaspoons Salt
  • 1/2 Inch Cinnamon Stick
  • 1/2 Teaspoon Lemon Juice

Instructions

Step 1
Start by heating the oil and butter in a pan on a medium flame.
Step 2
Test the oil by adding one cumin seed, if the cumin cracks, your oil is perfectly hot.
Step 3
Add cumin seeds, mustard seeds, bay leaves and red pepper to the oil.
Step 4
Now add rice and stir fry it for about 2-3 minutes.
Step 5
Now add water, zucchini, lemon juice and salt to the mixture and then let it simmer while you stir occasionally.
Step 6
Stir this till a boil appears. Then lower the flame and cover the pan with a lid.
Step 7
Cook the rice for about 15 minutes and you're done!
Step 8
Melt some cheese over the rice and serve hot with yogurt, pickle or soup.
