Here’s is a lip smacking and mind-blowing dish that you can prepare as a gourmet this valentine’s day. With the sweet potatoes mixed with the wild mushrooms with added flavours this dish is super heavenly. Take a look at the recipe here:

  • Cook pasta sheets in a hot water pan and let it all cook for 30 minutes while you stir occasionally through the pasta. Once the pasta soften and is minced, is it done. Meanwhile add mushrooms to a bowl with 2 quarters of water and microwave till the water is hot and simmering. Set this aside for 10 minutes and allow it to drain, squeeze dry and chop into two halves.
  • Take the sweet potatoes and boil in hot water for about 10 minutes. Transfer them into the food processor, add the maple syrup and olive oil and form a thick paste with it. Season the paste with salt and pepper.
  • Heat the vegetable oil in a medium pan and heat it over a high flame. Add the fresh soaked mushrooms and cook them till they turn golden brown. Turn the flame down and add shallots, thyme and garlic and keep stirring for a while, then add some soy sauce and lemon juice and salt and pepper to taste and lastly, take it out in a bowl.
  • Take the pan and put it over high heat once again, add white wine and cook till it is reduced to half. Add the mushroom liquid and the beans add the escarole, soy sauce, lime juice and salt and pepper to taste. Transfer into a baking dish and let it be aside.
  • Set the oven to 475-degree Farenheit, using paper towels dry each sheet of paste by placing it in the oven and drying both of its sides.
  • Now take a dried sheet of pasta and layer it up with the potato and the mushroom mixture. Roll the pasta and form a cylindrical shape with it.
  • Keep the rolls into the baking pan and add a bit of pan liquid to it and bake until brown.
  • Garnish the rolls with cannelloni and add butter beans to it. Drizzle some olive oil over it and serve.

  • 1/2 Tablespoon Lemon Juice 1/2 Cup Dry White Wine 250g Cans Large Butter Beans 1/2 Head Escarole
