Make Crispy Medu Vada With This Super Easy Recipe

Now, if you are thinking the same old idli and dosa, let me stop you right there. South Indian cuisine goes way beyond the popularised idlis and dosas. Let’s take a look at medu vada, a delicious snack which comes straight from South India.  Medu vada is one of the most popular snacks in South India. Traditionally, medu vada is served with coconut chutney.

Shaped like a donut, medu vada is an incredibly delicious snack to satiate your appetite with. In South India people have it as their breakfast meal. Served with coconut chutney and piping hot sambar, the medu vada has a remarkable taste. Let’s check out how to make this delectable recipe at home in no time!

How To Make Medu Vada?

  • Soak 1 cup of black grams or Urad dal for 4-6 hours in a bowl. 
  • After soaking the lentils for six good hours, drain the water from the bowl.
  • Then, shift the lentils from the bowl to a grinder or a blender jar.
  • Add ⅓ teaspoon of salt to the grinder jar.
  • Add water to begin with and then grind it into a paste.
  • After you have made a fluffy paste out of the lentils, shift the batter into a bowl and then beat it for 40 seconds till the batter becomes aerated. 
  • Add a pinch of baking soda, half teaspoon of pepper, finely chopped green chilies,  asafoetida, chopped onions and chopped curry leaves. Then, mix it well. 
  • To make the vadas, dip your fingers in water. Then, scoop out the batter with your palm and make a round ball of it.
  • Flatten the ball only slightly and then use your thumb to create a hole right in the middle of the vada. 
  • To fry the vadas, begin by heating oil in a utensil. Once the oil is heated enough, gently slide the vadas into the container one by one to let it fry.
  • Set the fried vadas aside and drain the excess oil through a parchment paper. 
  • Serve the hot vadas with coconut chutney and sambar.

  • Soaked Black Grams Or Urad dal in water (4-6 hrs)
  • Salt
  • Asafoetida
  • Powdered black pepper
  • Chopped curry leaves
  • Chopped ginger
  • Chopped green chillies
  • Oil


Step 1
Grind the soaked black lentils in a grinder with water to make a paste.
Step 2
Add salt, asafoetida, black pepper, green chillies, chopped curry leaves and finely chopped ginger to the paste.
Step 3
Beat the paste for 40 seconds till the batter is fluffy.
Step 4
Shape small portions of the batter in a round ball and go on to heat oil in a container in medium flame.
Step 5
Let the vadas fry in oil for a while and then take them out in a container.
