Enjoy this Arabic dessert prepared with pistachios and an amazingly delicious ashta filling cream. Try this recipe right away!

  • Fill the ashta filling in a piping bag and spread dollops of ashta filling over a baking sheet. Then press the top and flatten them. 
  • Cover with plastic wrap and freeze to make them solid. 
  • Then take pistachios and 25g sugar and mix them all together. 
  • Finely ground this mixture and then in a different pan roast the semolina in butter for 2 minutes.
  • Add the rest of the sugar to the pan and cook while stirring constantly.
  • Add the pistachios mixture, orange, and rose water, and combine everything well. 
  • Then cool it down in the refrigerator for about 30 minutes. 
  • Then take it out and the dough will be formed with it. 
  • Now pick spoon full balls of the pistachios mixture and place them over the baking sheet. Make an indentation in the pistachio ball and place the ashta balls over it then gather dough and cover the ashta filling inside the pistachio mixture.
  • Garnish with pistachios powder and rose petals to serve!

Ingredients

  • 114g Unsalted Lightly Toasted Pistachios
  • 150g Granulated Sugar
  • 57g Unsalted Butter
  • 80g Semolina
  • 1 Cup Water
  • 1 Tablespoon Orange Blossom Water
  • 1 Teaspoon Rose Water
  • A Few Chopped Pistachios & Ground Pistachios
  • Edible Dried Rose Petals

Instructions

Step 1
Make dollops of ashta filling and freeze them in the fridge. But before that flatten ashta balls with a finger tip.
Step 2
Then, mix pistachios and 25g sugar and combine well.
Step 3
Roast semolina in a pan in butter for two minutes, add rest of the sugar and mix again.
Step 4
Finally to the semolina mixture add the pistachios mixture and then combine with orange and rose water.
Step 5
Refrigerate this for 30 minutes and with the dough prepared balls.
Step 6
Insert ashta filling balls inside and roll then nicely.
Step 7
Garnish with powdered pistachios and rose petals to complete.
