Almost every nation across the globe is in complete or partial lockdown to stop the transmission of COVID-19. Governments are doing everything in their power to find a vaccine and get all their citizens supply of essential goods during this time, and people are too trying their best to use these supplies efficiently. Keeping this in mind, here we have enlisted 3 South Indian recipes which can be easily curated with a few ingredients available in your kitchen and are perfect for breakfast, lunch, and dinner!

Rasam

Ingredients

  • 2 chopped tomatoes
  • 1 pinch asafoetida
  • 1/4 tsp cumin seeds
  • 1/2 tsp peppercorns
  • 1/4 piece ginger
  • 2-3 curry leaves
  • 2 tbsp chopped coriander leaves
  • Salt as required
  • 1 cup of water
  • 1/4 tsp ghee
  • 1/4 tsp mustard seeds

Method

  • Soak the tomatoes and ginger in lukewarm water with a pinch of salt. 
  • In a blender, add tomatoes, asafoetida, cumin seeds, peppercorns, ginger, curry leaves, coriander leaves and salt in it. 
  • Heat water in a pan on a medium flame. Add the ground paste and bring it to a boil. Cook for a few minutes and then switch off the flame and keep it aside.
  • Heat ghee in a pan and add mustard seeds to it. Once they start to crackle, add them to the rasam. You can also add some curry leaves and green chillies to make it tastier. 

Upma

Ingredients

  • 100 g semolina
  • 1 diced potato
  • 1 chopped onion
  • 1 diced tomato
  • 1 chopped capsicum
  • Salt as required
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 3-4 curry leaves 
  • 2 finely chopped green chillies 
  • 3 tbsp sunflower oil
  • 1/4 tsp ginger
  • 1/4 tsp chana dal
  • 1/4 tsp urad dal
  • Water as required

Method

  • To prepare this authentic recipe, dry roast the suji until it turns golden brown. 
  • Heat oil in a separate pan and add mustard seeds, cumin seeds, green chillies, ginger, chana dal, and urad dal. Keep stirring all these ingredients and let it cook for a couple of minutes.
  • After a few minutes, add curry leaves before adding onions and potatoes to it. Saute the onions for a few minutes till they turn slightly pinkish in colour. 
  • Add tomatoes, capsicum,  and carrot to it and mix well. 
  • Add salt along with water and let it cook for 10-15 minutes. 
  • Next, add roasted suji and mix well. Cook for a few minutes on a low flame. 
  • Transfer it in a bowl and serve hot!

Rava Uttapam

Ingredients

  • 1/2 cup semolina
  • 1 small tomato
  • 1 small onion
  • 1/2 cup water
  • 1/4 tsp baking soda
  • 2 tsp lime juice
  • Salt as required
  • Refined oil as required
  • 2 green chillies

Method 

  • Combine semolina and water in a bowl. Mix them into a smooth batter and keep it aside for 30-40 minutes. Once done, stir and add salt, baking soda  and lemon juice. 
  • Heat oil in a pan and pour a small portion of batter on it. Spread the portion in a concentric circle and then add chopped onion and green chillies.
  • Drizzle some oil on the batter and cook the Uttapam until it turns golden brown from both sides. 
  • Transfer it onto a plate and serve hot with your favourite chutney.
