  • Start by heating the grill to high. Then insert and prick the potatoes with the help of a fork and put it in the microwave for 5-10 minutes until they turn soft.
  • Mix together the avocado, lime juice, red onion, and half the oil.
  • Moving on, take out the potatoes and cut them into two halves, then take out the flesh and keep it in a bowl. Use the leftover olive oil for drizzling over the potato skin. Now grill for 10 minutes to make it super crispy.
  • Now take the potatoes you stored in the bowl, and mash them. Add the fajita spice, spring onions, and coriander stalks. 
  • Remove the potato skins from the grill after they become crispy and then scoop out the filling and stuff in the potato skins. 
  • Finally, garnish with coriander leaves, onions, soured cream, and serve with the avocado salad you made.

Ingredients

  • 2 Baking Potatoes
  • 1 Avocado
  • ½ A Red Onion
  • 1 Lime Juice
  • 1 Tablespoon Olive Oil
  • 75g Cheddar
  • 2 Teaspoon Fajita Spice Mix
  • 2 Spring Onions
  • ½ Small Pack Coriander
  • Soured Cream

Instructions

Step 1
Heat the grill to high.
Step 2
Microwave pricked potatoes for ten minutes and cut them into half.
Step 3
Take avocado, lime juice, red onions and half of olive oil and mix.
Step 4
Scoop out the flesh of the potatoes and transfer them to the grill, let it cook for 10 minutes.
Step 5
Take the flesh and mash them with coriander, spring onions, fajita sauce and fill them inside the skin after they cook.
Step 6
Garnish with coriander, onions, soured cream and serve with avocado salad.
