What Is Onndhiyo?

Onndhiyo is a winter special Gujarati delicacy that boasts a medley of seasonal mixes. The blend of different vegetables adds warmth and richness to this cuisine making it a must-try in winter.

Onndhiyo Recipe

Here’s a step-by-step process to make Onndhiyo:

Step 1: Take all vegetables required to make the oondhiyu.
Step 2: Peel the potatoes and remove stems for brinjal. Make a criss-cross cut on brinjal and potato from the topside until 3/4th length.
Step 3: Put the vegetables with the prepared masala.
Step 4: Meanwhile make muthiya. Take gram flour, fenugreek leaves, a teaspoon of red chilli powder, turmeric powder, a pinch of baking soda, sugar, lemon juice, oil and salt in a medium bowl. Mix the ingredients and make a soft dough.
Step 5: Grease your hands with oil and make 10-12 oval-shaped muthiya and deep fry it.
Step 6: Now heat ½ cup oil in a pressure cooker over medium heat.
Step 7: Add a pinch of asafoetida and saute for 10 seconds.
Step 8: Add surti papadi, valor papdi, tuvar lilva, green peas, yam and salt. Combine them well and cook for 2-3 minutes.
Step 9: Add one teaspoon of red chilli powder, 1/3 teaspoon of turmeric powder, 1/2 teaspoon cumin-coriander powder and 1/4 teaspoon of garam masala powder.
Step 10: Mix and cook for 3 minutes. Now add stuffed brinjal and potato and sprinkle some salt.
Step 11: Add one and a half cups of water and fried methi muthiya over it.
Step 11: Gently mix the curry with a spatula and garnish with fresh coriander leaves.
Step 12: Serve with poori.

Ingredients

  • 270 grams of green garlic
  • roughly chopped
  • 2 cups (60 grams) roughly chopped fresh coriander leaves + to sprinkle
  • 250 grams brinjals
  • 250 grams of raw bananas
  • 500 grams fresh pigeon pea pods (toovar dana)
  • 250 grams surti papdi
  • 250 grams medium potatoes
  • 300 grams purple yam
  • 2 cups chopped fresh fenugreek leaves
  • Salt to taste
  • 1½ cups (150 grams) scraped fresh coconut
  • 50 grams of ginger
  • roughly chopped
  • 12-15 green chillies
  • stemmed
  • ½ tsp Kashmiri red chilli powder
  • ¾ tsp turmeric powder
  • 2 tsp + 2 tbsps coriander powder
  • 2 tbsps ginger-green chilli paste
  • ½ tsp carrom seeds
  • ½ tsp white sesame seeds
  • ¼ tsp + 1 tbsp sugar
  • 1 cup gram flour
  • ¼ cup whole wheat flour
  • 1 tbsp + 2 cups oil + for deep frying
  • 1½ tsps asafoetida (hing)
  • 100 grams papdi dana

Step

  1. Step 1:

    Take all vegetables required to make the oondhiyu.

  2. Step 2:

    Put the vegetables with the prepared masala.

    Add one and a half cups of water and fried methi muthiya over it.

    Gently mix the curry with a spatula and garnish with fresh coriander leaves.

  10. Step 10:

    Serve with poori.
