If you are getting really bored in the lockdown, you can always resort to the most fun thing to do and that's baking. Today we have the Butter, Almond, and Honey cake recipe, so, go ahead and try it at home and utilize your free time creatively.

  • Preheat your oven at 200 degrees Celcius. Then begin to line the baking dish with baking paper.
  • Take the butter to a pan and heat it for 5 minutes on medium flame. Let the butter turn brown before you allow it to cool at room temperature.
  • Now to the food processor add the eggs, sugar, vanilla, and half of the honey. Whisk this mixture until it gets doubled.
  • Then add the almond meal, flour, baking powder, lime zest, lime juice, and a pinch of salt flakes.
  • Add 2/3 of the butter and combine all the ingredients nicely.
  • In a bowl, add the leftover honey, salt flakes, almonds, and the remaining butter and mix it all well, and spread it over the batter. Bake for about 40 minutes, cool and serve.

Ingredients

  • 200g Unsalted Butter
  • 6 Eggs
  • 1/2 cup Caster Sugar
  • 300g Honey
  • 2 1/2 Teaspoon Vanilla Bean Paste
  • 3 cups (250g) Almond Meal
  • 2/3 cup (100g) Plain Flour
  • 2/3 Teaspoon Baking Powder
  • Zest Of 2 Limes
  • 1 Lime Juice
  • 120g Almonds
  • Icing Sugar

Instructions

Step 1
Preheat over at 200 degrees Celsius.
Step 2
Line the baking dish with baking paper.
Step 3
Heat the butter in a saucepan and turn it brown, then allow it to cool.
Step 4
Add eggs, vanilla, sugar and half honey and whisk till it doubles.
Step 5
Then go ahead and fold in almond meal, flour, baking powder, lime zest and lime juice, salt flakes, 2/3 butter and mix well.
Step 6
In a different bowl mix honey, almonds, salt flakes, left over butter and spread over the cake batter.
Step 7
Bake for 40 minutes, cool and serve!
