Gur Pare Recipe Card

  • 1/3 Cup Oil
  • 2 Cups Maida
  • 1/4 Cup Water
  • 1 Tsp Ghee
  • 1 Tbsp Fennel Seeds
  • Oil For Deep Frying
  • 1 1/2 Cup Jaggery


Step 1
Mix the maida and 1/3 cup of oil until you get a crumb like texture and then add in a spoon of water and keep kneading like this to make the dough.
Step 2
Keep the dough aside for 10 minutes.
Step 3
Divide the dough into portions and flatten them. Then cut out sticks which can be 3 inch thick or how you like it and do that to the entire dough.
Step 4
Deep fry all the sticks until crisp and brown while the flame is on medium heat.
Step 5
Drain them on a paper towel and let cool a bit.
Step 6
Now, on a slow flame, melt the grated jaggery, saunf and teaspoon of ghee while stirring continuously.
Step 7
The consistency should be such that if the jaggery is dropped in cool water, it should solidify.
Step 8
When you reach this point, throw in the pare into the mixture and mix very quickly. Use 2 ladles if you have to and coat them all very well.
Step 9
When done, turn off the flame and transfer the gur paras in a plate to cool down.
Step 10
Be gentle in handling so that they do not break and then serve.
